1-1/2 cups granola
1 cup plain latta kefir
1 egg
1/2 cup maple syrup
1 cup whole wheat pastry flour
1/2 tsp. sea salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 cup butter, melted


Soak the granola in the kefir for 5 minutes or more (the longer it soaks, the lighter the muffin). Stir in egg and maple syrup. Mix together the dry ingredients. Stir into the granola mixture. Finally, mix in melted margarine.

Bake in greased muffin tins at 400° for 15-20 minutes. Makes 8-9 good sized muffins or 1 doz. small muffins.
