1¼ cup Plain Latta Kefir
2 cups all-purpose flour
½ cups lightly packed dark brown sugar
2½ t baking powder
2 t apple pie spice
¼ t baking soda
¼ t salt
1 cups grated carrots
2 large eggs
½ cups canola oil
1 t vanilla extract
1 cup raisins


Mix together flour, sugar, baking powder, apple pie spice, baking soda and salt.
In a food processor, pulse Latta Kefir, carrots, eggs, oil and vanilla. Mix into flour mixture, then stir in raisins.Divide batter among a greased or paper cup-lined 12-cup muffin tin. Bake at 375°F until golden-brown, 25-28 minutes.
